"Do not check" cannot be set as a document default. From which defaults the Normal style will inherit the setting. The "Default" button sets the language defaults for the Normal Template - and, in Word 2016, the language of the document defaults. Make sure you save the style to your template so you can re-use it. If you apply that to the table, it will bring in the no proofing setting every time. You may consider creating a "No Proofing" character style. A table cannot have a "language" specification, so if you select the whole thing, the language and don't check will always come back as undefined. There does seem to be an issue in the operation if you select the entire table.
